Homemade Broccoli Soup

Margaret's Broccoli Soup

I had this at a friend’s place for lunch one day and was addicted immediately.

700 g broccoli

1 small onion

3 cups chicken or vegetable stock

1/8 teaspoon dry mustard

salt & pepper to taste


1. Cook the broccoli and onion in the stock until tender.

2. Add the mustard and blend (I like to leave it a bit chunky still)

3. Add a cup of cream or yoghurt

4. EAT

Even kittens know how yummy broccoli is…

  1. Broccoli soup is one of our family favourites…Easy, tasty and healthy…We found it goes well with fresh home-baked bread and small cubes of strong cheddar. Yumm…
